Odette is an ode to French cuisine and Chef-owner Julien Royer’s grandmother, who taught him how some of the most remarkable dishes come from the purest ingredients. This background no doubt helped Julien attract two Michelin stars within the first year of opening, and 5th place on the Asia’s 50 Best Restaurants 2018 list.

Odette serves modern French food that is guided by Julien’s lifelong respect for seasonality, terroir and artisanal produce. Termed ‘Essential Cuisine’, Julien’s dishes are honest and refined in their simplicity. Without culinary pretence, his menus showcase some of the best produce from around the world, all treated with the delicate and astutely restrained touch which has become his signature.

Julien has devoted years to forging lasting relationships with some of the finest boutique producers from around the globe, including cheeses from Bernard Antony in Vieux-Ferrette, north-eastern France; pigeon from Plounéour-Ménez, north-western France; asparagus from Asperges de Roques Hautes in the Marseille region; as well as fish and seafood from Hokkaido prefecture in Japan, among others. At Odette, he takes pride in offering guests a unique opportunity to taste these exceptional ingredients at their peak, in the heart of a city that is itself at the crossroads of the world. The restaurant offers a selection of four, six or eight course meals which vary depending on the day or session. Vegetarian menus are also offered.

The wine list at Odette is a collaboration between award-winning head sommelier, Vincent Tan, and Julien. The list showcases winemakers who share the same respect for their harvest as Odette does and prizes quality over variety. Similarly, much reverence is paid to the five thoughtfully selected champagne varietals that are available by the glass and presented on a custom-made oak champagne trolley. The range spans from the celebrated Henri Giraud Fût de Chêne Aÿ Grand Cru to the Chartogne-Taillet Rosé and unforgettable Krug Grande Cuvée. The wine program was recently awarded Silver in Wine & Dine’s annual dining guide – Top Restaurants 2018.

Julien also collaborates with some of the world’s best chefs, bringing a flavour of the Odette experience overseas as well as hosting world-class culinary collaborations with them at Odette. In 2018, he cooked alongside the legendary Alain Passard, Gert De Mangeleer (Hertog Jan), Josean Alija (Nerua), Zaiyu Hasegawa (Den), Isaac McHale (The Clove Club) and Dominique Crenn (Atelier Crenn).

Beyond the food and wine, every detail in Odette has also been carefully considered. London’s famed Universal Design Studio (UDS) designed the 32-seat space, which includes an additional private dining room; with overall creative direction led by Singaporean artist Dawn Ng. UDS approached Odette’s interior design as an art piece, intentionally mirroring Julien’s approach of honouring the integrity of ingredients and their pure flavours. This is demonstrated through the use of natural, raw elements that communicate warmth and comfort, as well as a soft colour palette, all while respecting its historic and iconic location within the National Gallery. A key feature is a glass-enclosed kitchen, where diners have the opportunity to witness the chefs at work, reflecting the openness and honesty of Odette which is central to the entire dining experience.

UDS approached Odette’s interior design as an art piece, intentionally mirroring Julien’s approach of honouring the integrity of ingredients and their pure flavours.
