It could be argued that the soul of Spanish culture lies in its food and the shared experiences over a meal. Alma, translating to ‘soul’ in Spanish, aims to re-create this feeling, offering a sanctuary where great friends and even better food unite for a memorable dining experience.
It was celebrated chef, Juan Amador, whose vision drove the wheel of this outstanding restaurant. Having already earned three Michelin stars at his restaurant in Mannheim, Germany, Juan set his sights on Asia. In 2015, Alma by Juan Amador was born – humble and understated, much like the man himself.
Now three years later, the restaurant has earned and kept one Michelin star every year from its first year. Unfortunately, Executive Chef, Haikal Johari, had a life- changing motorbike accident not long after the opening, which left him paralysed from the neck down. However, through sheer determination, Haikal has been making great strides in his recovery. He can now make slow and steady steps for a short distance – a miraculous feat his doctors would have described as impossible 3 years back.
With great fortitude and dedication, the entire Alma team stayed up for countless nights until the wee hours, together with Haikal after his physiotherapy sessions, to experiment and create bold new dishes which challenge culinary boundaries.
Deeply inspired by Japanese cuisine, Haikal marries his training in European cuisine with hearty Asian flavours and ingredients to create titillating dishes that are exhilarating and familiar, all at once. The new dinner menus come in 4, 6 and 8-course options. Diners can also pair the menus with a great wine expedition wine flight to match the dishes.
Look forward to the incredible umami Muirgen Oyster, a duo-layered chawanmushi with sweet botan ebi, creamy homemade Sauce Choron enlivened with uni, truffle jus and topped with crispy kale. The Okayama Muscat Grape Chutoro is a delightful interplay of the sweet and savoury – gorgeous julienned Okayama green grapes and Hokkaido uni are delicately perched atop fatty chutoro seasoned with a touch of spicy-salty Yuzu koshō.
Full of rich smoky aroma, the Iberico Pork Jowl glazed with aka miso is sous-vide, then grilled on a traditional binchotan grill, paired with crisp artichoke and earthy black sesame purée. One of the best wagyu beef brands in Japan, tender Ōhmi Beef melts in your mouth, together with an intense wine and beetroot reduction, fine horseradish potato and crispy seaweed. Cap off the gourmet experience on a sweet note with the Mango dessert, a beautiful tangy mango cremeux, yogurt with a touch of myoga (Japanese ginger) for a refreshing palate cleanser.
