It might be named after the street on which it lies, but the restaurant, 28 HongKong Street, is deceivingly hard to find. If you can find your way through the unmarked door, you will be rewarded with an expertly crafted selection of cocktails and irresistible bar bites at one of Singapore’s most influential bars.
You can thank Spencer Forhart, Paul Gabie and Snehal Patel for the American-inspired drinking den. The trio moved to Singapore in 2007 to work at a private investment firm, but they quickly grew to miss their favourite bars of New York. When the friends decided to take a hiatus from their suit-and-tie lives and start the bar of their dreams, 28 HongKong Street was born.
From day one, Spencer, Paul and Snehal have exclusively stocked quality spirits, and were determined to be experimental in all aspects of their business. Parts of the concept at 28 HongKong Street that were originally seen as risky are now what visitors love most – using only quality spirits, offering boozy and unique-flavoured drinks, and playing a soundtrack of urban American music.
More than five years on, the focus still remains on artisanal spirits, American-style cocktails and straight forward American comfort food. The 28 HongKong Street kitchen offers a menu of bar snacks includes a New York–style Reuben sandwich, Ma- Fan fries and the profoundly popular truffle mac ‘n’ cheese balls – all made from scratch in-house.
Each delicious bite has been designed to complement the epic drinks program, which feature 16 craft cocktails at any one time. That said, the bartenders don’t limit themselves to a firm drinks list; instead they love the challenge of creating new drinks, experimenting with flavour combinations and perfecting a few classics.
One thing that stays constant: all ingredients are of excellent quality. In addition to using craft spirits, the team uses freshly squeezed juices, homemade syrups and locally sourced herbs and garnishes. The talented bar team, led by Lukas Kaufmann, ensures these ingredients are used to create the most memorable drinks possible.
The bar also stocks a few wines and champagnes, available by the glass, and as with everything else, the wine is selected based on what the team loves.
The intimate space is designed to transport visitors – it is a place where guests can forget about the craziness of life, sit back with a cocktail and catch up with friends.
With the incredible success at 28HongKong Street, other restaurant and bar owners around town began asking the boys for help importing independent spirits. Realising just how big the market was, the founders established Proof & Company Collective – a food and beverage consultancy, distributor and retail brand that helps bars and restaurants throughout Asia succeed.
What 28 HongKong Street lacks in signage, it makes up for in excellent offerings. Once the pioneer in Singapore’s cocktail boom, 28 HongKong Street continues to be a favourite watering hole and thought leader, offering customers the best boozy creations, bites and fun vibes.
