With a nod to the Prohibition era, The Other Room is possibly the only bar in the world where all its spirits are made in-house. The venue is the shining light on what would happen if the Eighteenth Amendment was passed today.

Dedicated to the new global trend of producing rare, small batch, cask-finished spirits, The Other Room’s owner, founder and Master Bartender, Dario Knox, came up with the concept.

The award-winning bartender is an innovator that doesn’t take for granted the majority of the things surrounding him, and who always questions and challenges himself to achieve new heights and to discover new ways.

All spirits used at the bar go through a maturation process, where the liquid rests inside casks that have previously stored a different product such as wine, sherry, madeira, port, and a lot of other products. This produces a unique twist to every spirit, one that is exclusive and definitely not a cookie-cutter experience.

The “Timeline Menu” offers tributes to the classics, from the beginning of the 1500s until today. With a 45-page menu, you will enjoy the journey of tasting unique spirits on their own or whipped up into a cocktail that you only dreamt about.

You will be able to taste the first written recipe for a Punch style drink, which dates back to 1632, called the High Tea. It includes vodka, peach, lavender, lemon, dry vermouth, Yuzu tea and pear blossom. According to the menu, the first written recipe for a Julep-style cocktail was by a Virginian gentleman in 1787. Enjoy the Balvenie Julep, made with Balvenie Doublewood, Cognac bourbon, mint, sugar and Angostura bitters.

You can also try the Milano Torino Jerez, a drink that dates back 150 years and perhaps the reason the Negroni was born. It is made with Punt e Mes, Campari, Angostura and Manzanilla. Dating back to Chicago in 1880, try The Southern New York Sour which is made up of rye, cognac, lemon, port, egg white and Angostura Bitters.

Starting as an interpreter and translator, Dario made the decision to solely focus on building a career in bartending when he joined the Eclipse Bar in the W Hotel, Barcelona. It was there that it started to be known as Daio Knox, a name that would soon take the cocktail world by storm.

He first made it to the Spanish National Finals of the World Class Cocktail Competition in Madrid, Spain. He then won the top spot at the Bacardi Legacy Cocktail Competition in in 2011 again in Spain, before flying to Puerto Rico to represent Spain in the World Finals in the following year. On top of that he also scored the highest score in a lot of other acclaimed competitions such as the Bulldog Shake Attack Cocktail Competition in Spain, and the Sidecar by Merlet Cognac Cocktail Competition representing Spain at the World Final in Cognac.

Dario came to Singapore to open one of the very first cocktail programs back in 2011.

Since then he has become a pioneer of the Singapore Cocktail scene, mentoring and growing local talents over a span of 6 years, pushing Singapore’s prominence in the international bar scene.

The Other Room has been included in Asia’s 50 best Bars for 2017 and 2018 and also included in the world’s 100 Best Bars in 2018.
