Symbolising the urge to explore uncharted territory, two famous Australian explorers, George Bass and Matthew Flinders have served as the inspiration behind a unique distillery business on Red Hill.

Bass & Flinders Distillery was founded in 2009 by entrepreneurial adventurers Wayne Klintworth and Bob Laing. After traveling to the Mornington Peninsula and discovering many great wineries but no distilleries, they saw an opportunity to create their own grape-based spirits such as grappa and brandy.

Bob and Wayne enlisted the assistance of an internationally recognised master distiller to mentor them, and developed contacts with artisanal distilleries in Cognac and Normandy, with the ambition of produce an Australian aged spirit that is distinctive and comparable with the best products from France. Armed with this passion, alongside a newfound respect for the relationship between grape production, winemaking, distillation and the aging processes, the duo opened Bass and Flinders.

The heart of their business is the 300-litre “French designed” Alembic style still. The small batch sizes and double distillation techniques produce the high-quality grape spirit required to mature and age in specially commissioned French oak barrels.

Bass and Flinders Distillery also offer a distinct range of other grape spirit based products, including gins, vodka, grappa and eau de vie for Poire William, Limoncello and Crema di Limoncello, Mistelle fortified wine, fruit and cream liqueurs and brandied fruits.

A triple distillation technique is used to produce the gin products and the soon to be released Vodka range. For the gin products, carefully selected botanicals are vapour infused producing a range with unique flavours and aromas.

In creating a new type of business on the Mornington Peninsula, Wayne and Bob offer visitors a different tasting experience that complements the area’s wine-tasting options. They opened their cellar door in 2012, and you can visit for tastings and purchases on the weekends and public holidays.

Surrounded by vineyards, Bass and Flinders Distillery offers tours by appointment providing insights into the mysteries and the art of distilling. Through partnerships in France, they also offer a selection of aged Cognacs and Calvados for tasting from specialist distillers.

Sadly, co-founder Bob passed away in February 2016, but his legacy lives on in his work at Bass and Flinders, with their products ranged in several well-known cocktail bars. Wayne continues to operate the distillery with his daughter, Holly Klintworth.
