From a young age, hospitality always resonated with co-owner/operator of Watermarc restaurant, Damian Clay.
Finding his feet in studying hospitality management, Damian went on to work at iconic Richmond pub, the Kingston Hotel. Flourishing in the industry, it was not long before Damian was head hunted for renowned Melbourne venue, Ristorante Robertos. It was here mentor, Roberto Scheriani, moulded the fine dining skills Damian has carried through to his Wangaratta setting. Whilst hospitality was an avenue for co-owner, Katie Clay, to earn an income whilst studying nursing, it soon became an industry hard to give up. After opening her first restaurant, Agro Dolce, rave reviews sealed this establishment as a favourite in the eastern suburbs and Katie’s home in hospitality.
Both Katie and Damian saw a real hole in the dining scene of Wangaratta, and hoped to fill the void with their fortuitously acquired venue. In a regional town where the food landscape is mainly comprised of fast food and family style restaurants, Watermarc has brought contemporary styled inner-city dining to regional Victoria. Looking out over the Ovens River, this venue provides a serene outlook come the warmer months. The building, that once housed an old tyre-fitters workshop, is now rolling out food with finesse in the art deco fit-out of this industrial barn.
The menu’s offerings are synonymous with the style of food Damian and Katie love to cook and eat. Without any fixed cuisine, and a passion for all styles of food, the menu reflects what is in season as well as in fashion. Although the menu changes frequently, one house-made favourite has cemented its place due to popularity, the house-made gnocchi pan-fried with sage, pumpkin, spinach and sunflower seeds, finished with bocconcini. Watermarc caters to all appetites, providing the full dining a la carte experience, or sharing plates and wood fire pizza over a couple of drinks. Ensuring a quality dining experience, all of the pasta, gnocchi, breads and desserts are made on premises. The ingredients reflect the local harvest, sourcing fruit and vegetables from La Bella Rocca and Grassi’s as well as local cheese, breads, olives, and mustard.
With six years experience with one of Melbourne’s leading wine wholesalers, Damian’s knowledge is reflected in their diverse wine list. It incorporates some European drops as well as locally sourced wines including Silent Range, Pizzini, Dal Zotto, Brown Brothers, Indigo Vineyard, Amulet Beechworth Cider, Campbells, and Wood Park. Enjoy a drink with friends on their deck with alfresco dining, accommodating up to 80 people. With a diverse range of seating indoors able to host up to 70 people, Watermarc restaurant is a popular choice for your next party or function.
