Located just a short drive out of Bendigo, the General Store sits proudly on Spring Gully’s main road. Having served the community as a general store for generations, Holly and Adam Nicoletti transformed it into a contemporary licensed cafe in 2015. They retained the original charm and added a number of sustainable features, including 120 solar panels and a 20,000-litre water tank. In the extensive backyard you’ll find wicking beds full of fresh produce or use in the kitchen. When it comes to essential utilities such as paper, napkins, takeaway coffee cups and trays, they opt for compostable or recyclable options, contributing to a reduction in the amount ending up in landfill.
In keeping with their focus on sustainability, Adam and Holly source coffee from Espresso Syndicate and Clark Street Roasters. Both businesses produce ethically minded boutique blends and use environmentally friendly packaging, all without compromising on quality. What’s more, all beans that pass through Spring Gully’s grinders are grown using sustainable farming practices.
Head Barista, Alex Prosser, turns out quality shots with Espresso Syndicate’s Seasonal Blend – a complex blend with nutty flavours, mild acidity and a lingering cocoa and caramel finish. If it’s something cold you’re after, choose one of the cold drips, made using a rotating selection of single origins. V60 pour over filter coffee completes the offering, ensuring there’s something for every coffee aficionado.
After ordering your brew, turn your attention to the food menu. Like the coffee, the food derives from sustainable avenues. Fresh greens from the garden, free range chicken and eggs, bred free range bacon, and organic, locally produced bread all feature. The all-day breakfast and lunch menu includes sophisticated offerings such as the red velvet waffles with boysenberry ice cream, smashed meringue, berry textures and cream cheese glaze and the soft shell crab burger on a charcoal brioche bun with pickled cucumber. Dairy free, gluten free, vegetarian and vegan options are also available to accommodate your dietary needs or preferences.
On Friday nights, Spring Gully General Store opens for dinner. Cocktails are added to the everyday selection of local beers, wine and cider. The menu revolves around shared plates with dishes like zucchini flowers with truffle honey, goat’s cheese and date filling, various grazing boards, pizzas and sumptuous desserts.
