Fino is the epitome of progressive regional dining. The long-standing partnership between renowned chef, David Swain and front-of-house personality, Sharon Romeo, has resulted in one of South Australia’s most successful regional restaurants.
Fino was established in 2006 with a vision to serve fresh, simple food centred on the best South Australian produce and to provide personal and welcoming service. The menu was designed around sharing that evoked conviviality. Their original, unassuming 30-seater restaurant in Willunga South Australia earned the pair numerous awards.
As a result of their success, they were invited to bring Fino to Seppeltsfield in the Barossa Valley in 2014. The winery was originally established in 1851 and is one of the Barossa’s most reputable wineries. David and Sharon brought their own style of shared dining, setting up shop in the original bottling hall. Today, Fino is one of the best culinary destinations in the region and is part of a vibrant and exciting village precinct for wine, food, art and craft, as well as a historical experience.
Fino’s connection to the region and deep commitment to the enjoyment of every guest is the driving force behind their philosophy. Dishes are thoughtfully created to express regionality and to support small-scale, sustainable producers. Wines also play a major role, and they source small-batch, hand-crafted wines that are mostly organic and biodynamic with minimal sulphur, minimal oak, and minimal bottle weight.
David is an Adelaide boy and, at an early age, he immersed himself at the elite restaurant level at Mistress Augustine’s before he continued to build his reputation, knowledge and skills in high profile restaurants in Melbourne. His long and inquisitive relationship with local farmers and producers has delivered him the products he requires to create innovative, yet deceptively simple dishes that are constantly exciting his guests.
Front-of-house maestro, Sharon, is committed to her Italian heritage and the place that food has in that culture. Her decades of restaurant experience plus her expansive wine knowledge and connections, make Sharon one of the most dynamic and caring hospitality professionals in the region.
