There’s nothing more luxurious than finishing up a fantastic meal and retiring to your room, just metres away. At Appellation at The Louise in the Barossa Valley, it’s a nightly occurrence, where guests can sample superb seasonal cuisine before returning to their vineyard retreat.
Situated in the picturesque Barossa Valley, The Louise offers 15 private suites with outdoor showers, marble ensuites and private terraces overlooking vineyards. The infinity lap pool, onsite games court, sauna and fitness centre ensure an all-round luxurious experience. The onsite restaurant, Appellation, offers guests and visitors the chance to sample some of the region’s best produce in a contemporary regional setting.
Executive Chef, Ryan Edwards, hails from nearby Lyndoch, and honed his skills at deluxe resorts in far north Queensland and the Gold Coast before returning home to head the kitchen at Appellation.
The menu showcases the best the region has to offer and varies according to what’s available to the chefs from their extensive network of local suppliers, with more than 85 per cent of the produce travelling less than 30 kilometres from the grower to your plate. Keeping food miles to a minimum, the team grow and harvest vegetables, fruits and herbs in the kitchen garden, bake their own breads and butcher and cure meats. They even carbonate their own rainwater, collecting and filtering it so that it’s fresh, free and almost carbon neutral.
Expect fantastically paired flavour combinations, such as a terrine of beetroots with herbed chevre and toasted walnut vinaigrette, and twice cook belly of Berkshire pork, with pickled carrot, soy pudding and sesame or blue swimmer crab with apple, avocado, crème fraiche, tarragon and salmon roe, and Hutton Vale lamb cooked two ways, with Jerusalem artichokes, ox tails and a sherry jus.
Accompanying the menus is an award-winning wine list that draws inspiration from its surrounds: the beautiful Barossa Valley. Featuring both established wineries and emerging artisan vineyards, the list boasts more than 600 varieties from local, Australian and international regions, including the Clare Valley, Heathcote, Burgundy and Rioja.
