Since its first vintage in 2008, Gundog Estate has continued to produce high quality, distinctive wines that tell a story of their terrior.
The addition of the Hunter Cellar and Gourmet Pantry in 2011 has seen the boutique winery establish itself as mainstay in one of Australia’s best wine regions.
Gundog is owned and operated by the talented Burton family. Everyone plays a part in the business, from the family cocker spaniel who inspired the winery’s name and label, to the Director and Head Winemaker, Matt Burton.
For nearly two decades, Matt has been involved in various roles of winemaking and wine business management, working at wineries throughout the United States and France, as well as the Hunter and Yarra Valleys. In 2011, Matt decided it was time to pursue his own winemaking interests, and took on the family label in a full-time capacity. He injected a passion for single vineyard wines, regional expression and premium grape varietals into the business.
Matt’s award-winning winemaking techniques stem from a belief that new line well-made wines clearly reflect where the fruit is grown, and tell a story of the vineyard and season in which they were grown. Matt’s drive and innovative style sees Gundog Estate focus on semillon and shiraz, producing five variations of each of these styles, as well as a limited supply of cabernet sauvignon for the label’s rosé.
One of these styles is the Wild Semillon, a wine that pushes the boundaries of conventional winemaking and uses natural yeast to foster fermentation. This results in a textual and complex style that showcases the versatility of this grape.
If you must choose only one Gundog drop to try, the Wild Semillon is it. A very aromatic wine, it offers notes of lemongrass, peach and herbal teas and has a slight residual sweetness. It pairs well with spicy and salty Thai-style dishes, as well as lighter poultry dishes.
