Combine a fresh twist on tapas and contemporary cocktails with a modern-style dining experience, and you’ll have Byron Bay’s St Elmo.

Four years ago, Angela and Tom Honeywell were looking for a change of pace, having moved to Byron Bay after leaving behind the fast life in Sydney. When the opportunity to take over St Elmo came up, they knew it would be silly to pass up.

St Elmo now stands with a Spanish identity and outstanding reputation amongst Byron Bay locals. Its innovative menu has been carefully crafted and curated by Head Chef, Craig McFarland, influenced by his extensive experience and travels alongside Angela and Tom.

The menu and style of St Elmo is based on two core concepts. The first is to focus on local produce and keep the menu interesting, seasonal and forever desirable in line with Spanish culture. The second is to create a memorable culinary experience for both locals and transient visitors.

Angela knows the importance of St Elmo’s outstanding service and welcoming atmosphere, explaining that the team works hard to leave you with a memorable, positive and noteworthy dining experience.

Grab a chair by the bar for a quick bite to eat, or take a table for the total dining experience. For a traditional Spanish dinner, you can expect an array of meats and share platters, leaving you to try a little bit of everything. A must try is the slow-cooked meat, which changes seasonally, but always promises to delight.

Those looking for something lighter, otherwise known as a ‘la merienda’ (snack), can gorge on the most gourmet ‘bar snacks’ out there. You haven’t had the full Spanish experience without trying the jamón serrano, freshly cut off the 18-month La Hoguera Spanish mountain ham and paired with fresh tomato bread.

To wash it down, you can rely on an exciting and ever-evolving cocktail list, created and poured by the amazing team behind the bar. The Garden Glass combines Belvedere vodka, lychee liqueur and green tea, shaken with fresh apple juice, lime juice, and mint, while the The Real Madrid features a bold mix of rye whiskey, Palo Cortado sherry and apricot brandy with a dash of Angostura and absinthe bitters.

St Elmo keeps its visual elements minimal, with its dark interior and contemporary accents. With one main dining room and some outdoor seating, it captures Byron Bay’s laidback, relaxed vibe while also providing an elegant and slightly rustic experience. The St Elmo team prides itself on exceptional customer service, which comes easily when the staff genuinely love what they do. Their passion for their work shines through and resonates through to your dining experience, creating a comfortable and warm environment.

Whether you’re passing by or planning to stay a while in the beautiful Byron Bay, St Elmo will transport you to the streets of Spain. Expect a gorgeous array of share platters, friendly faces, fresh jamón and The Real Madrid.
