Four years ago, Angela and Tom Honeywell were looking for a change of pace, having moved to Byron Bay after leaving behind the fast life in Sydney. When the opportunity to take over St Elmo came up, they knew it would be silly to pass up.
St Elmo now stands with a Spanish identity and outstanding reputation amongst Byron Bay locals. Its innovative menu has been carefully crafted and curated by Head Chef, Craig McFarland, influenced by his extensive experience and travels alongside Angela and Tom.
The menu and style of St Elmo is based on two core concepts. The first is to focus on local produce and keep the menu interesting, seasonal and forever desirable in line with Spanish culture. The second is to create a memorable culinary experience for both locals and transient visitors.

You haven’t had the full Spanish experience without trying the jamón serrano, freshly cut off the 18-month La Hoguera Spanish mountain ham and paired with fresh tomato bread.
To wash it down, you can rely on an exciting and ever-evolving cocktail list, created and poured by the amazing team behind the bar. The Garden Glass combines Belvedere vodka, lychee liqueur and green tea, shaken with fresh apple juice, lime juice, and mint, while the The Real Madrid features a bold mix of rye whiskey, Palo Cortado sherry and apricot brandy with a dash of Angostura and absinthe bitters.
