Safran, the Turkish word for saffron, is a golden, fragrant spice used by ancient Persian worshippers as an antidote for melancholy. In modern times it has a plethora of uses, including the name of an incredible Turkish restaurant that is sure to cure your gastronomic blues.

Suleyman – or Sulo, as he is affectionately known by his patrons – grew up in Mengen, by the Black Sea in Turkey. Culinary excellence runs through his blood, and after working with the finest dining establishments in Istanbul for many years, he brought his love for the delights of Turkish food to the Central Coast in New South Wales. Sulo and his wife, Natalie, ran a series of highly successful Turkish events at another of their enterprises before bringing their passion to Safran.

Unique in its approach, Safran is a place to enjoy Turkish food as it should be – delicious, enjoyable and memorable. Sulo and Natalie share their personal stories through their well-considered menu, from marinated olives to pan-seared scallops served with sweetcorn puree and smoked tomato reduction.

Meze, from the Persian word ‘mazze’ meaning taste or relish, is an important part of the colourful history of Turkish cuisine. Made up by a selection of small dishes designed to be shared, meze is the perfect way to savour good company and a glass or two of traditional Raki.

Sulo’s menu offers a wide array of mouth-watering Turkish dishes. Choose among zucchini flowers, served with turlu vegetables, goat’s cheese, dill and tomato sauce; prawn kadayif in shredded pastry with orange syrup; and hot smoked lamb shoulder with silverbeet and chickpea braise and lamb jus. With the rich flavours of Turkish spice, lemon, chilli and of course saffron, Safran creates a truly unforgettable experience.

For a sweet escape after dinner, float away with Sulo’s Assiette – a delicious combination of baklava, Turkish delight, milk pudding and revani semolina cake; or try his divine Turkish coffee crème brûlée, served with vanilla serendipity ice cream.
