Cottontails on the Ridge is centred on ‘three Rs’ – relax, recharge and refill.
This purpose-built modern restaurant, which overlooks the surrounding vineyard, has an emphasis on superior food, wine and service, making it impossible not to embrace the three Rs every time you visit.
In 2005 Gerry McCormick and Sue Limberger produced their first barrel of chardonnay at the Charles Sturt University Winery, and in 2007 they made their first commercial wine. A year later, production had increased significantly and so they built and opened a winery on their 100-acre property in Harefield. The region itself is named after the abundance of hares that frequent the area and Gerry and Sue wanted to carry this theme to their restaurant and winery, opening Cottontails on the Ridge.
Cottontails is family owned and operated, right through to the restaurant’s kitchen where Sasha Limberger takes the reins as Head Chef. In fact, she designed the first Cottontails’ menu before the building was even finished! Sasha’s menus showcase and celebrate local produce, particularly produce from the property. This means Cottontails own olive oil, cured olives and wines are used frequently and seasonal herbs, fruit and vegetables are sourced from the kitchen garden.
This focus on paddock-to-plate freshness means the menu at Cottontails is heavily influenced by what is seasonal. Sharing is encouraged, with a selection of platters, tapas and wood-fired pizzas among popular casual choices, but for the true Cottontails experience, choose from the vast a la carte lunch and dinner options. Whatever type of meal you opt for, you can be sure that it will be a relaxed experience that allows you to truly enjoy each culinary delight on offer.
Start your journey with baked local camembert, served with caramelised macadamia nuts and drizzled with a sticky salted maple syrup. When it comes to mains, the twice-cooked pork belly with seared sea scallops is a stand out. Served with a Cottontails Chardonnay poached pear and a caramel vinegar glaze, this dish is a popular choice for obvious reasons.
Finish your leisurely meal with a dessert of melting chocolate fondant – a decadent chocolate sponge with a warm melting chocolate centre, served with chocolate ice cream and fresh mint. All of the desserts are hand-made by Sasha herself, demonstrating her talent as a chef.
Pair a glass of award-winning Cottontails Wine with a carefully prepared dish from the menu on the large alfresco dining area in the summer. In the cooler months, appreciate the acres of vines through the floor-to-ceiling windows from the warmth of the restaurant.
