If you’ve ever wondered what a beer brewed with wasabi, coffee or even oysters tastes like, then a trip to HopDog BeerWorks should be at the top of your bucket list. The microbrewery brews hop-centric beers and ales using high quality ingredients, attention to detail, and an infectious degree of enthusiasm.

HopDog is owned and operated by beer-loving couple, Tim and Tess Thomas. The two are passionate about all things beer related and wanted to share this love with like-minded people by bringing them fun and, at times, experimental brews.

Tim is the Head Brewer and has more than 15 years of brewing experience, including stints at the Lord Nelson and Five Islands Brewing Company. Tim’s launch into the world of beer began with home brewing while he was at university. Upon the completion of his electronic arts degree, the pull of professional brewing was so strong he headed to Sydney to pursue his true passion.

While Tess is not a brewer by trade, she has more than 15 years of experience as a chef – knowledge that is paramount to the brewery. Tess’ understanding of flavours allows them to refine each beer, ensuring that the brewery can stand out in the competitive craft-brewing industry.

The focus at HopDog is on ‘slow beer’, meaning it can take as long as four weeks to get from grain to glass. The ales are made with top quality hops from

Australia, New Zealand and the US while the best local ingredients – anything from pumpkin and seaweed to peaches and grapefruit can be added.

The standard range of beers includes the Horns Up – a clean and hoppy beer with aggressive aromas of citrus, grapefruit, resin, pine, mango and pineapple; the Redhopulus – an American-style red ale with aromas of citrus, tropical fruit, cracked pepper and a hint of chocolate; and Cherry Bombah! – an exciting beer with a fairy-floss-like aroma that has been brewed with local cherries.

Tim and Tess also have their own hop garden at home, which allows them to produce an annual Estate Hopped Ale. The couple celebrate each year by inviting guests to come and taste the final product.

Customers are also invited to HopDog to see, smell and witness the entire brewing process. With fresh beers brewed two to three times per week, the brewery is likely to be in full swing on any visit, allowing guests to taste samples of the core and specialty ranges.

There is also a taproom and Cellar Door available for customers who wish to sit down and savour the taste of the delicious range or buy some to takeaway.

The friendly and passionate couple behind HopDog BeerWorks loves nothing more than sharing their product with visitors, and encouraging friends, new and old, to continue learning about beer.
