For a chef that describes seasonality as ‘everything’, there’s no better place to set up shop than within a food market. Paul Wilson has done just that, opening the multi-faceted Wilson & Market at Prahran Market.
The award-winning chef is no amateur when it comes to creating unique culinary concepts. British-born, he left a fantastic career in London to build an even better one down under, making his mark through head chef positions at a string of restaurants, including The Botanical.
Years as a consultant chef followed and Paul soon became known as the ‘Mr Fix-it’ of the restaurant industry, elevating restaurant culinary philosophies from good to great.
Wilson & Market represents his first solo venture and an opportunity to bring his simple cooking ethos to a different type of market. In this endeavour, he has been joined by Executive Chef, Dave Marshall and Wine Director, Virginia Selleck.
Dave arrives at Wilson & Market straight from a stint at The European, where he was assisting Ian Curley with the launch of Kirk’s Wine Bar and French Saloon. Likewise, Virginia’s resume includes a number of Melbourne’s leading venues, including Cumulus, Inc., Rockpool Bar & Grill, The Stokehouse, Prince Wine Store and Bellota Wine Bar.
Together, the talented trio makes a fantastic team. The final iteration of this venture will include three different elements – The Lifestyle Cafe, Luxe Bar, and Brasserie – each offering a different approach to farm-to-table dining.
Using only ethically farmed produce, the Lifestyle Cafe aims to reinvent the wheel when it comes to fast food. Dishes are informed by the ideals of nourishment and wellbeing, and are accompanied by St Ali coffee, mouth-watering treats by market chocolatier, Tad Lombardo and refreshing aqua fresco fruit drinks. There are biodynamic salads and vegetable dishes, as well as market-centric rotisserie and BBQ sandwiches.
If the cafe is your morning destination, the Luxe Bar should be your afternoon one. With a terrace bar overlooking Commercial Road, a diverse food and drink menu and that same fine-dining approach to ingredients, it has all the hallmarks of a much-loved casual dining destination. Feast on wood-fired Mediterranean flatbreads, seasonal salads and a selection of small plates, all while sipping on a glass of fine wine, a craft beer or cocktail.
In particular, the spirits list at Luxe Bar reads like a who’s who in Australian craft spirits, with a selection curated by Four Pillars Brand Ambassador Sam Ng. An array of curated gin & vodka tonics are served with seasonal condiments sourced from the Prahran Market & biodynamic farms and premium mixers from Fever Tree and Capi Australia.
The final link in the chain, Brasserie, is a 250-people destination, where food and wine sit equally as top priority. Here, Chef Dave oversees a menu of wholesome dishes, made with only the freshest seasonal, biodynamic and organic produce. With European undertones in the winter and Mediterranean-style dining in the summer, there’s a plate for every palate. These dishes are accompanied by a wine list of over 100 drops, designed by Virginia and sourced from both unique small-batch producers and established wineries.
With three diverse dining offerings, Wilson & Market has something for everyone. With a Prahran Market setting, it’s a foodie haven that’s worth the trip to Chapel Street.
