Aburi Sushi refers to the cooking method of lightly searing fish with direct contact from a flame to ensure that it is partially grilled and partially raw, creating a deep flavour. This traditional Japanese technique style has seen a recent revival in contemporary Asian cooking, and thanks to The Modern Eatery, this is Melbourne’s new home of Aburi Sushi.
The Modern Eatery is the brainchild of Perth-based duo, Jason Tan and Edward Teh. Due to the success of their first hospitality venture by the same name in Western Australia’s Fremantle, Jason and Edward have set up shop in Melbourne, bringing with them a deep passion for Japanese cooking and a flair for casual yet sophisticated dining.
Richmond’s newest hub for Japanese cuisine is built around bringing people together through food and culture. As such, this inclusive mandate is reflected in its design, put together by Studio Equator, where diners can sit up at the open plan sushi bar and see the talented chefs work their magic right before their eyes. The 90-seat restaurant spans over two levels, with a sleek Japanese style that teams authentic interiors with a modern flair.
The menu is separated into small sharing plates that encourage diners to share among friends and try a bit of everything. Signature dishes include the salmon oshi – consisting of compressed salmon with aburi sauce and sweet soy. The Chasing Sunset craft roll pairs seared salmon with egg omelette, sweet potato fries and spring onion, drizzled in garlic mayo. Hot dishes include classics like pan fried gyoza with umamiso, and truffle seared wagyu beef with lotus chip, creamy garlic shimeji and mushrooms.
As per tradition, no true Japanese feast is complete without a whisky or perhaps a sake. A selection of Asian inspired cocktails as well as Japanese and local Victorian craft beers will be served as the perfect accompaniment to a wholesomely flavoursome meal.
The Modern Eatery opened it’s doors in August, and if the success of its older sibling in Perth is anything to go by, we’re of the mind that it’s not one you’ll want to miss.
