Acclaimed Chef, Donovan Cooke, has done it all – from working under culinary veterans like Michael Roux and Marco Pierre White to manning the kitchens of renowned venues, Ondine, Est Est Est and The Atlantic Restaurant at Crown. His career ticks all the boxes for a true culinary passion coming to life. Now, he’s getting back to what he loves most – cooking for small, intimate groups of people and as always, keeping things interesting at his newest hospitality venture, Ryne.
Never shy of the trailblazing spotlight, Donovan has made sure that Ryne will showcase the best of his tried and tested recipes and techniques. His talents, combined with that of business partner and long-time colleague, Alex Law, are set to put forward an interactive fine-dining experience that pairs fine French food with top shelf wines for an unmatched culinary experience.
The Ryne experience will begin from the get-go, as elegance protrudes even before one dish is set on the table. Sit up at the stone-topped bar before your meal and sip on a glass of refreshing white or a full-bodied red, before settling into the deep blue walnut chairs for the evening and let the food do the talking.
Donovan and Alex’s menu is seasonally-driven and will be set for the evening. The handful of lucky visitors will have the option of the two-course menu ($65), three-course ($80) or a seven-course tasting menu ($150). The fare is French-infused, so expect to see dishes like orange-scented marron with pea pannacotta making an appearance, as well as smoked rainbow trout with dashi-infused daikon and horseradish. To finish, it wouldn’t be a fine-dining French experience without a soufflé, and the Valrhona 70 Guanaja chocolate soufflé topped with raspberry should be just the ticket.
Each course is, of course, paired with a drop from Ryne’s exclusive list of international and local wines. If it’s a nightcap you’re after, opt for a glass of the Bordeaux Chartreuse de Coutet to finish off a delicious meal in the most French way possible.
Ryne is an Anglo Celtic translation to a course continuously moving onwards, and that’s exactly what Donovan and Alex are doing. Always on the go, searching for the next project to bring to the table, there’s no doubt that Ryne will surprise time and time again. That is – if you can keep up with it!
