If you loved Yak Italian Kitchen and Bar, then you’ll love the next phase of its evolution – Lello, which launched on Flinders Lane in September.
Co-owner and head chef, Leo Gelsomino’s vision for Lello was to capture the essence of authentic Italian cooking and its rich history. He’s spent years perfecting his signature pasta recipe that uses sprouted, germinated flour that accounts for the lower gluten content and higher nutritional profile.
“I have a custom-made pasta extruder made in Italy which I used to develop our signature, durum wheat flour dough,” said Leo.
Pasta is the hero of the Lello story, so much so that if you’re lucky, you may even see the chefs in action as they spin together some fresh, delicious tresses. Opt for the lasagne verde, a traditional dish that layers sheets of hand-made pasta with veal and pork ragu and orange zest. Duck liver is finely chopped and melted into the sauce which, when served with fresh truffles, adds a delicious richness to the dish. Lello’s lasagne pairs beautifully with a glass of deep Ripasso, a full-bodied red with flavours of dark cherry and espresso.
Next up, sample something a little different, like the arso casarecce caccio e pepe – a burnt grain flour casareece with pecorino, parmesan and cracked pepper. The nutty flavours of this dish are best enjoyed with a fresh glass of Italian Menhir Salento Novementi Rosato, a rose-coloured drop with hints of Turkish Delight originating in Puglia.
Dessert takes the form of both food and wine, with a sweet Moscato bringing floral aromas and essences of honey and fruits to the palate. For the full sweet experience, order this drop with a serving of the sfogliatella ruccia with marsala and Amarene cherry – a pastry-based dish filled with marsala custard and topped with Amarene cherries.
