Although he has been offering his Sample Tables for quite some time now, IDES Head Chef, Peter Gunn, has created the ultimate top-secret, limited edition Melbourne event. Offering an unseen menu to IDES diners on a Thursday evening, Pete has designed a weekly test kitchen experience that will feel like your own privé event.
After receiving an overwhelming amount of praise, IDES Sample Tables are finally opening up to the entire restaurant on a weekly basis. What began as two tables of regulars dining on some of the many ideas that Pete has rolling through that chef brain of his, has now developed into a weekly tradition attracting diners from all over the city.
“Sometimes we are 100% happy with a dish, but it might not fit with the current set menu,” Peter said. “Sample Table is an opportunity for us to offer diners a preview of these dishes, for regulars to try new stuff and for first timers to test we do at a lower price.”
The concept also allows for the normal IDES menu to become more focused. Rather than experimenting with new dishes all the time and rotating them around the menu, IDES is now able to maintain a core menu and feature occasional new dishes, which the Sample Table events deem suitable, alongside this menu.
To accompany this evolving menu, the IDES Sommelier/Restaurant Manager, Raffaele Mastrovincenzo, has created a succinct wine list as well as two wine pairings and a non-alcoholic selection of beverages to match with your meal at the event.
