South Yarra gets a touch of the Parisian with the launch of European-style bistro, Gilson. Old world charm meets modern cuisine to create an environment that feels fresh, yet timeless.
The hospitality powerhouses behind the modern bistro are Loren and Jamie McBride, known for some of Melbourne’s favourite venues: Barry, Touchwood, Mammoth and Primo.
The duo brought their extensive hospitality knowledge to the project and enlisted design experts Projects of Imagination to create their vision of a classic bistro. Responsible for some of the city’s most iconic hospitality design at Supernormal, Chin Chin and Coda, the Projects of Imagination teams drew inspiration from the continent to create the space: think gold-trimmed tables, tan leather seating and bentwood chairs.
The menu is equally classic, using simple techniques to let seasonal produce shine. Chefs, Emma Jeffrey and Pippa McLeod, oversee the kitchen and the wood-fired oven, serving up dishes such as locally sourced flathead with burnt butter and zucchini flowers, and perfectly burnished wood-fired pizza. Make like the French and round off the meal with a golden peach tarte tartin.
On weekends, Gilson becomes a community hub, inviting locals to experience la vie en rose. Stop by to pick up bunches of blooms and a gelato made by the specialists at Pidapipo. It’s all part of the ethos that an eatery should serve as a social hub for its guests. Service is in the European tradition – professional, knowledgeable and passionate.
Draw up a bentwood chair on the sidewalk, order some fine rose and some oysters and the streets of Paris won’t seem so far way.
