One of St Kilda’s oldest venues has had a makeover. The former George Hotel has been transformed into Freddie Wimpoles, a beer lover’s paradise with 13 taps and New York–style deli food.
Liam Ganley and Scott McKay took over the iconic venue in late 2015, bringing 10 years hospitality experience refurbish this Melbourne institution.
As they researched the history of the venue one name stood out – Frederick Wimpole. Frederick is a Melbourne icon that time forgot. Between becoming mayor of St Kilda in the late 1880s to being the director of The Melbourne Co-operative Brewing Company (now Carlton United Breweries), and running the George Hotel with his family for almost 80 years, Freddie is a name all Melburnians should know. Liam and Scott thought so too, and decided to pay homage to him in their newest venture.
Just as their namesake would have wanted, craft beers will be the focus of Freddie Wimpoles. A total of 13 taps will feature a rotating selection of craft beer from Australian and international brewers – Feral and Brooklyn Brewery are on the list of respected brewers to now call Freddie Wimpoles home. There will also be a selection of tinnies and bottled brews to enjoy on-site or to take home with you.
Cocktail lovers will also find something to quench their thirst with a tight cocktail list focusing on classics with a twist. It’s hard to go past the wood-chipped smoked Old Fashioned. If you’d prefer, keep your order simple with a selection from the 180 premium spirits on hand.
Keep your hunger at bay with class New York–style deli fare. Enjoy slow-cooked meat subs, hot dogs, beef jerky and house-made pickled vegetables. No matter what your selection, every offering will be the perfect match for an ice-cold brew.
To keep with the American theme, the venue has been clad in recycled wood, giving it the feel of a warm and welcoming hunting lodge while the jukebox and neon lights are reminiscent of an American diner. The entire space has been created using salvaged – the walls are clad in old floor joists while the bar is made from reclaimed doors, one wall has been tiled entirely with old beer cans. This is interior decorating that beer fans can definitely appreciate.
Freddie Wimpoles aims to be a beer lover’s paradise and we have no doubt it will deliver. Get ready for monthly tap takeovers and beer fuelled events throughout the year. To kick off the fun and games they will be hosting their first Good Beer Week event “America, F#@* Yeah!” Guests will be able to sample a selection of five American craft beers shipped in especially for the occasion. These will be matched with Ole Smokey Moonshine and house-made beef jerky.
With capacity for 150 people, there’ll be room for everyone. So, hurry along and get down to St Kilda’s newest craft beer destination.
