The team behind Melbourne favourites Pastuso and San Telmo are back at it, with a chicken shop set to spice up Brunswick Street.

Part chicken shop, part Latin American eatery, CHE will trigger childhood memories of suburban chicken joints with a splash of the new.

The name, meaning buddy, was inspired by Argentinian slang, but it’s also an acronym for CHE’s three specialities: chicken, helados (ice cream) and empanadas.

These delicious dishes will be available in a selection of different flavours and styles, all of which will be overseen by Head Chef, Alejandro Saravia (Pastuso). The signature CHE charcoal chicken will be marinated in Peruvian chilli and dark beer for 48 hours before it’s cooked to perfection in the venue’s custom charcoal smoker and grill.

Empanada wise, you can expect a selection of beef, chicken and vegetarian options, all of which are served with a side salad. For the ultimate experience, add on the chicken shop staple: crunchy iceberg lettuce and radish with a creamy dressing. Best enjoyed with a good slug of Argentinian wine.

And to wrap it up? Melty, sweet helados. For a new take on an Argentinian classic, try the dulce de leche soft serve with blueberry and Malbec jam with crushed macadamias.

In addition to the flagship offerings, Alejandro will be taking ‘made-from-scratch’ to the next level, making his own chicken salt from dehydrated, smoked and ground chicken skin.

CHE guests can sit inside and sample the treats as they admire the design, which pays homage to the street-food culture of Argentina and Peru. If you don’t want to venture out, you can opt to have anything from the menu delivered to your door.

Customers can also buy marinades in store, as well as Sunday roast dinners to take home, meaning the CHE experience doesn’t have to end when you leave the restaurant.

“Putting a Latin American twist on a chicken shop combines the Australian childhood memory with my childhood memory of visiting my local empanada stores as a child,” said owner-slash-chef Alejandro.

“We’re recreating these memories with a delicious offering that people can enjoy in-store or at home.”
