When top tier food, highly acclaimed wine, a refined space and excellent service collide, it looks a little something like Brasserie at Wilson & Market.

As the last installation of the already impressive Wilson & Market stable, Brasserie joins Luxe Bar and the Lifestyle Cafe in bringing to fruition the dream of Australian food icon Paul Wilson. Having lent a helping hand to venues like Icebergs Dining Room in Sydney and Melbourne’s The Botanical Hotel, there really is no wonder that the first solo venture of the highly acclaimed restaurateur has been so avidly anticipated.

Brasserie seats 250 of Melbourne’s hungriest gourmands in a brand-new space, envisioned by designer, Kestie Lane. The space takes into account Paul’s focus on the farm-to-table movement, adding sleek finishes to the contemporary, modern setting. Featuring a seafood bar, an extensive list of international wines and artisanal spirits and a menu full to the brim with contemporary Australian cuisine, there really is no end to Brasserie’s potential.

Paul is joined by Executive Head Chef, David Marshall, who has previously worked in the kitchens of Melbourne’s The Botanical, Middle Park Hotel and London’s La Tante Claire. Together, Paul and David are committed to serving up wholesome dishes using only the freshest seasonal, biodynamic and organic produce. The menu changes according to nature’s bounty, with European influences during the winter months, and Mediterranean style dining in the summer. With close links to partnering farmers like Transition Farm on the Mornington Peninsula, Daylesford’s Angelica Organic Farm and Macedon’s Glenora Heritage Produce, you can indulge knowing that each bite is nourishing as could be.

The Crustacea Bar will be filled with seafood from the surrounding Prahran Market. Here, you can nibble on platters and pan roasts whilst sipping on a concoction from the list of Australian spirits, curated by Four Pillars’ Sam Ng. Alternatively, opt for a drop from Brasserie’s extensive wine list, put together by Sommelier, Virginia Selleck. Featuring wines from boutique vineyards as well as those who need no introduction, there are no shortages of beautiful drops to pair with each dish.
