If you don’t let your dough leaven for 48 hours, is it really “pizza”? Not according to the team behind 48H Pizza & Gnocchi Bar, who allow the natural yeast to work its magic for at least two days, ensuring a light, fragrant and aromatic base.

Owners Fabio and Michele are no novices – they first met working together as part of the D.O.C group, with Michele as Executive Chef and Fabio as Area Manager. Fabio recognised a need for an authentic pizza and gnocchi bar, and so recruited his friend to go into business together.

In the quest for the perfect pizza and parcel of potato, they have gone straight to the source. 48H boasts a specialty oven from Italy, which can churn out five pizzas in 60 seconds. They also air freight their buffalo mozzarella from Italy weekly to ensure diners get the real deal.

Before you dive into the main event, snack on their delicious range of antipasti, including homemade crusty bread with buffalo mozzarella, heirloom tomatoes, tuna, fresh basil, organic Calabrian oregano and extra virgin olive oil; and homemade porchetta with Montasio cheese and fruit mustard.

Pizzas begin with gourmet offerings such as marinated salmon, taggiasche olives, Avruga caviar, goats cheese and garlic-infused oil, and the ‘tonno rosso’ with the infamous buffalo mozzarella, marinated fresh red tuna, organic red onion, bottarga and organic strawberries. Classics then come into play, with authentic ingredients such as fior di latte, prosciutto di parma and Sicilian cherry tomato sauce.

But pizza isn’t all they offer. 48H boasts one of the largest varieties of gnocchi in Melbourne. To the delight of coelicas everywhere, the three types are made with gluten-free flour, which keeps them light and fluffy. The original potato can be served up with slow-cooked lamb, taggisache olives and wild mushrooms; or a minced beef and pork ragu. A jet black version – injected with activated charcoal – is contrasted against a creamy gorgonzola sauce with vincotto, or served in a wheel of parmigiano to be shared amongst four. A gamberi version combines prawns, spices and garlic in the gnocchi mix, served with a choice of three different seafood combos.

Finish off with a selection of three cheeses served with jam and jelly, or sweeten the deal with a classic tiramisu. If you love Nutella, you’ve come to the right place, as two of their desserts ooze with the chocolate-hazelnut spread.

48H’s interiors are homey and rustic, with exposed brick walls and classic wooden tables. With Italian waiters and authentic flavours, this pizza and gnocchi bar takes the best parts of the boot-shaped country and plops them in the middle of South Yarra, ready for every visitor to enjoy.
