Solar panels on breweries, kegs on bikes and brews in reusable cups: the Good Brew Co. is the environment’s best drinking buddy. The man pedalling away is Dean O’Callaghan, who wants to see humanity’s relationship with the Earth exist symbiotically.
Dean’s journey began in 2007 when his father purchased Buckley’s Brewery in Healesville. He left behind two degrees in computer programming to join his Dad and pursue his passion for microbrewing. But he soon discovered that brewing takes up some serious energy, time and money. He realised that he needed to align his passion for the environment with the brews he was creating – and so the Good Brew was born!
Solar panels were placed on the roofs, and evacuated heat tubes were used to heat the water for brewing beers. To cut back on the packaging Dean also began strapping his kegs on his infamous bike, riding to any event or occasion around Brunswick to deliver his homemade brews to thirsty patrons. Brewing beer was just the beginning. Dean’s commitment to helping the environment allowed him to discover that he could also create a unique range of kombucha.

It might be difficult to pronounce, but kombucha is easy to drink. It tastes great and has the added bonus of being good for your insides. Dean said, “It’s been dubbed ‘magic tea’ because of its combination of fermented, sweetened tea and high number of probiotics.”
Every SCOBY (symbiotic colony of bacteria and yeast) that produces the mighty beverage feeds on natural ingredients with no preservatives or GMOs. In true Dean style, the kombucha is also produced in a sustainable manner – the bottles are labelled with vegan inks printed on recycled paper swing tags.
There are five brews to tantalise your tastebuds and excite your insides. Each is sustainably handcrafted from organic Sencha green tea, organic raw sugar and pure spring water. The ‘red’ is tempered with hibiscus, lemongrass and ginger, while the ‘green’ features apple, mint and chlorophyll. The ‘yellow’ flavour includes passionflower, orange blossom and turmeric, and the ‘purple’ holds lavender, acai, maqui and purple corn. Finally, the ‘original’ features all the powerful living antioxidant abilities of a great kombucha.
