What began as one humble pizzeria in suburban Melbourne has now evolved into the modern Italian Gastronome, D.O.C. Pizza and Mozzarella Bar, the back bone of the D.O.C group. Its passion for the best produce, charcuterie (salumi) and cheese has led to the opening of D.O.C Delicatessen in Mornington, and more recently, D.O.C Delicatessen in Carlton.
Speaking about D.O.C.’s philosophy, owner, Tony Nicolini explained, “Artisan Pizza is our platform. My team provides the theatre. Our philosophy is simple: D.O.C is real Italian eating, and age old simplicity, refreshed with contemporary flair.”
Located next to D.O.C. Group’s restaurant, DOC Espresso, the Deli invites customers in with a fabulous display of cured meats and other great produce hanging in the window. The fit-out has been well-thought out, with produce neatly displayed in cubby holes, glass cabinets and open fridges. Blackboards show daily specials, including a ‘today we are cutting’ salumi selection, which are helpful to inspire the home cook, and the Italian themed shopping baskets (green, red and white) make for an easy shopping experience.
Deli Manager, Eros Cugusi, and his team is more than happy to guide customers through the store with advice on what to cook tonight. Chefs are on hand to assist those who are keen to explore Italian cuisine further. If you’re less keen to get your hands dirty, you can watch the in-house chefs doing their thing through the kitchen window towards the back of the store.
Wondering what goodies you can get your hands on here? Expect artisan cheese (Fromaggi), old school Italian small-goods, and groceries that scream of the mother land. Fresh bread, figs, olives, truffled honey and more will catch your eye, and it’s unlikely you’ll walk out empty handed.
Looking for a drink? “No problems!” says Tony. Yes, the Deli is licensed, perfect for the various vino and cheese tastings, with regional produce featuring. Small boutique offering of aperitifs, wine and digestives that appear throughout D.O.C ‘s wine lists, are available to take home.
Tony explains that D.O.C. is an intentional celebration of heritage. “It is a joy in sharing – authentic, exuberant and outrageously Italian,” he said. “D.O.C. focuses on the overall experience, not just the food, and not just the fit out. This latest addition to the group offers a slice of modern Italy with all the trappings of old school Italian tradition.”
Complementing the downstairs deli, there is also an upstairs tasting room available for hire. Tutored cheese, salumi and wine tastings are available on a personalised basis, offering a unique tasting experience, for both personal and corporate clients. Ideal for industry product launches and training evenings, the setting can cater for seated groups of up to 20, and standing groups up to 40 guests.
