The ones responsible for slowing the traffic are Vincent Conti and Mario Minchilli. The pair are also the masterminds behind Prana Chai and Melbourne hot spot Merchant’s Guild – a beautiful brunch spot in Bentleigh East. With Walk Don’t Run, they’re venturing out into the wellness scene, delivering a wholefood approach to mindful eating.
The cafe is the perfect sanctuary to slow down, take some quiet time to nourish yourself and walk out the door feeling better than you did when you arrived. The unique design creates a calming environment, with elegant stone floors, white washed walls and simple timber tables that make the perfect spot to take a break. With acoustic panelling through the ceiling and wall perforations, it may be a small space but there is plenty of room to relax.

The brain behind the Japanese-inspired menu is the chef, Ryo Doyama, who is dedicated to using fresh, local and organic produce. He is committed to incorporating superfoods into every dish, charging your body without compromising on flavour. They make their own ‘life loaf’ that’s packed with seeds, nuts, coconut our, almond meal and dates – try it for yourself by lathering slices with raw, sugar-free berry chia jam and whipped ricotta, or cashew cream with grilled asparagus, Thai supergreens pesto and sunflower seeds.
Go raw with the beetroot bircher muesli with coconut, carrot, orange and barberries or try the savoury rice porridge with seasonal vegetables, ginger, chilli, soy sauce and coriander, cooked in kombu stock and served with crispy shallots and a poached egg. Whatever you do, don’t look past the cafe’s signature dish: hot-smoked salmon, served with roasted baby vegetables on a bed of ancient grains and drizzled with honey yuzu dressing.
