Owners of Two Birds One Stone in South Yarra have transformed what was once a cavernous concrete square shell into a distinctive neighbourhood hub. This is the fourth café that partners Nathan Toleman, Diamond Rozakeas and Ben Clark have been associated with, each providing a unique community focus for neighbours and nearby workers to meet, greet and assemble.
The partners have been revitalising dormant and emerging neighbourhoods by discovering unloved, out-of-the-way ‘spaces’ and transforming them into benchmark cafés with a ‘wonderland’ of quirky, colourful, edgy designs, each with their own distinctive thumbprint. Nathan says, “We’re all quirky characters with complementary skills who love what we do and who laugh a lot. But we are all deadly serious about creating Melbourne’s best cafés with our unique formula.”
He said, “Our passion is to create cafes with a ‘pulse’. It’s about the ‘mix’ of captivating people once they enter the front door and thrilling them with eye-popping design in a space which is a pleasure to be in.”
The décor is hand forged lighting, polished grained timber on benches, tables, columns, granite floor blocks, white painted square patterned timber sheeted walls and ceramic tiles. The partners sectioned the area to break up the boxy space and created nooks, partitioned singles benches, tables for two, a communal table that can seat 16, an elevated hero-coffee area and booths with upholstered seating to allow for private audible conversation.
Executive chef David Finlayson, who has worked in Michelin Starred restaurants in Europe and who oversaw the birth of George Calombaris’ new venture Mama Baba, along with Head Chef, Eddie Atkin, cook all menu options including cakes, in-house. They use as much local produce as they can, from fruit and vegetables to meat, free range chicken and dairy. Their haloumi is hand made by a local Cypriot.
These talented chefs present dishes which are works of art for the eye and palate. Even the specialty coffees, supplied by Five Senses coffee and prepared by head barista, Jack Monte, are mini works of art for all the senses.
Two Birds serves breakfast showcasing their signature dish Nut Clusters with berries and lavender cream as well as several options of cooked breakfasts including the aptly named Two Birds (eggs, bacon, tomato, pork chilli and fennel sausage, mushrooms, spinach and tomato relish) and One Stone (eggs, mushrooms, avocado, spinach, haloumi, house smoked corn & tomato relish). Lunch options include gourmet steak, lamb and chicken sandwiches, salads and other treats that include corn and zucchini fritters with haloumi, guacamole and house smoked salmon.
You will find Two Birds does not take itself too seriously, ready to have a laugh with the customers and amongst themselves. What they do take seriously is their sense of excellence – in food, coffee and service. Their success is a testament to this.
