When it comes to culinary creations, owner of The Craft & Co, Paul Baggio, is an avid supporter of boutique, local production. Paul has been in the food and beverage business since the late 90s, designing and supplying production and packaging equipment to producers across Australia and the Asia Pacific. Dedicated to ethical and sustainable practices, The Craft & Co team strives to provide a space for public education and interaction, encouraging visitors to ‘eat, drink, make, learn and shop’.
They distill their own spirits, cure their own meats and brew their own beer. In-house coffee roasting is an equally important aspect for the business, one that reflects their dedication to all things home grown. Boasting two 2kg coffee roasters, customers can literally wake up, wander in and smell the coffee roasting on-site, several days a week. Head Roaster, Tony Singarella, has a personal relationship with farmers at origin, sourcing green beans from countries including Brazil, Guatemala and Ethiopia.
Head Barista, Daniele Chiodo, is in charge of transforming the freshly roasted beans into a brew fit for Melbourne’s caffeine obsessed northsiders. Take a seat in the cafe and order an espresso, milk-based coffee, cold drip or naked bottomless filter brew. The house blend is a mix of beans from Brazil, Guatemala and Ethiopia, with an earthy undertone and sweet notes of caramel, chocolate and toffee with a mild acidity.
The Craft & Co also runs regular coffee cupping sessions and roasting masterclasses, sharing brewing techniques and tips with home coffee enthusiasts. Based up the business end of Smith Street, The Craft & Co welcomes a regular rotation of workers, locals, shoppers and young families.
The venue serves breakfast and lunch seven days a week, and dinner from Thursday to Saturday. The menu is a simple affair, punctuated by homemade preserves and relishes, in-house cured meats and the freshest local fruit and vegetables. Feeling inspired post-meal?
