It comes as no surprise that this space is the brainchild of Melbourne coffee icon, Salvatore Malatesta. His irrepressible love of coffee and relentless pursuit of perfection is evident in Sensory Lab’s scientific approach to the blessed bean – every part of the roasting and brewing process is endlessly refined to achieve optimum flavour.
Green beans from carefully chosen farms are roasted in-house, each batch roasted to bring out the unique flavours and aromas of the single origin beans. Along with Sensory Lab favourites, you’ll also find an ever-changing range of rare finds and special harvests from Nicaragua, Burundi, Guatemala and El Salvador.
What use is labouring away if no-one can try the end product? To ensure as many people as possible can sample Sensory Lab’s coffee, the roaster doubles as a cafe where caffeine fanatics and origin aficionados can gather for a good brew. The huge warehouse space is sleek and minimal – the equipment is the attraction here, complemented by industrial design touches that make you feel like you’re in the inner sanctum.
Like a cellar door for coffee, the cafe offers a wide range of varieties to try. Start with a white coffee made using the popular Steadfast blend. A combination of washed and natural process beans from Brazil and Colombia, you’ll taste notes of chocolate and caramel in the creamy and rich espresso.
Cater to your more experimental side with some single origin brews. Try Seamless – washed process beans from Peru that boast flavours of honey, grape and rosehip, creating a complex, delicate palate. Rotating single origins are also on offer – ask the team for their recommendations and they’ll be able to introduce you to a new world of coffee. Many of these coffees can brewed with a Moccamaster or V60 pour over to show a different range of flavour profiles.
