Established by Melbourne coffee kingpin, Salvatore Malatesta, Sensory Lab brings the rituals of coffee to the inner city. With a passion for specialty coffee and an adventurous approach to sourcing beans from origin, Sal has established himself as one of the frontrunners of Melbourne’s coffee industry.

Located within David Jones, the cafe’s focus is firmly on providing exceptional coffee. The fit-out is Japanese-inspired: minimalist and sleek with futuristic design features that stand out in their simplicity.

The baristas calmly cope with the morning rush, serving up silky lattes and rich ristrettos from the La Marzocco. The Sensory Lab Steadfast blend, roasted in the Port Melbourne roastery, is the most popular pour for white coffees, hinting at notes of chocolate orange and caramel. Rich and creamy, the blend combines washed and natural process beans from Brazil and Colombia.

If you like your coffee black, opt for the Seamless blend. You’ll taste honey, red grape and rosehip with a balance of sweetness. You’ll also be able to sample the rotating range of single origin beans sourced from farms in Nicaragua, Burundi, Guatemala and El Salvador.

It’s not just espresso on offer. Try a single origin from the Fetco, which delivers a carefully controlled batch brew to bring out optimal flavour, or perhaps a V60 pour over for a completely different coffee experience. The team will happily explain the finer points of the process if you’re a keen fan of the coffee bean, or they can simply provide you with a tasty brew to enjoy.

There’s also a selection of little treats on offer to accompany your coffee – you’ll find cakes made by the ST ALi team as well as tempting pastries from Rustica.

Busy commuters stop by for their morning grind, sleepy shoppers rest for a moment to enjoy a hot brew, while inner-city coffee connoisseurs make a visit to Sensory Lab to try the latest single origin.
