Take a moment to praise the pastry gods, Melburnians – legendary baker, Gontran Cherrier, has opened a boulangerie in Collingwood. One of the newest stores to grace Smith Street, the artistically designed bakery and cafe will be delighting Melbourne locals with freshly baked buttery delights every morning.

The bakery offers the full range of Gontran’s famous croissants, baguettes and signature creations. The first Australian store also includes some new creations, such as a saucisson and hazelnut bun, chocolate and cacao bread, honey ciabatta and some Australian native surprises designed by Gontran himself.

The baking is overseen by Head Pastry Chef, Kayte Perdrisat, who has more than 13 years experience working in award-winning London patisseries, including the Michelin-starred Greenhouse Restaurant. Kayte’s experience and passion allows her to successfully fuse modern Australian cuisine with classic French baking techniques.

All of the bread and pastries on the menu are made using imported French flour to keep the quality at its very best. The goods are baked in specialty Bongard ovens imported from France to ensure all the delicious treats are consistently cooked to perfection.

The Collingwood store also features a cafe, serving up a range of delicious bread and pastry-based dishes that make fine use of the bakery’s produce. While your tastebuds will be tempted reading over all of the mouth-watering menu items, you may find yourself drawn to some of the more intriguing combinations.

Gontran’s love of travel and passion for Asian and Japanese flavours is evident in many of his creations, such as the miso-spiked truffled cauliflower, spinach and Gruyere béchamel on rye bread; or the Japanese-inspired curry bun with crumbed pork, Tonkatsu sauce, kewpie mayonnaise and slaw.

Running a global business, he has enlisted the help of Travis Welch (ex-Pope Joan and Circa the Prince) to oversee the daily operations of the cafe and the menu. While Travis takes inspiration from Gontran’s unique creations, he also brings his own touch to the cafe.

The next question on everyone’s lips is coffee, right? Fear not – Gontran has you covered here too, with Melbourne coffee favourites, St Ali, supplying the freshly roasted beans to ensure the boulangerie meets the stringent standards of Melbourne’s coffee scene.

Local interior designers, Eades and Bergman, designed the space with Gontran Cherrier’s signature colours – black and pink – prominent throughout and an ornate sign that reads, “Let them eat croissants” adorning one of the black brick walls.

Showcasing the best of award-winning pastry chef Gontran Cherrier’s creations and serving some of Melbourne’s most renowned coffee, the boulangerie and cafe are bound to please all who enter the door.
