The boys behind the little hidden gem the White Oaks Saloon on Greville St have brought the best of the Americas down under. They have created a saloon-style bar that offers authentic ‘Southern-style’ food and an extensive list of approximately 200 craft spirits – one of Melbourne’s biggest back-bars south of the Yarra River. Expect a Southern Mississippi Delta blues vibe with the sounds of Ray Charles and BB King that will have you doing the hoedown by the night’s end.
Nicholas and Thomas Welch both have extensive experience in the hospitality field. Combining their burning passion for liquor with their desire to travel, they spent a lot of time in the US and Mexico working with liquor engineers at distilleries. The limited market in Australia for small artisan brands inspired their own alcohol distribution company, through which they source more than 40 products to sell nationally. The growth of their business sparked more than just their interest, with the daring duo deciding to open a space where they could share their passion and showcase craft products.
When naming their space, the town White Oaks in New Mexico, famously connected with Billy the Kid, inspired the brothers. And as all spirits are aged in white oak it was only natural that their space took this name.
When you step inside, expect a Southern-style saloon, it’s dim but neon-lit, perfect for a couple of drinks and a bite to eat. Start with the house-made blue corn chips and jalapeño salsa, or the deep-fried shrimp, seasoned and cooked with Cajun spice, Old Bay spice and a good whack of chilli.
If you’ve worked up an appetite, order some Carolina-style pork sliders, cooked with three house-made sauces and served on a brioche bun with slaw, or some tasty cayenne pepper seasoned Buffalo Chicken with a house-made jalapeno ranch.
Americans are known for their outrageous and over-the-top desserts. Sweeten the deal with classic s’mores with melted marshmallows and Hershey’s chocolate, all sandwiched between Graham crackers.
The boys are renowned for their booze, and if you find yourself in front of the bar ready for a drink, you’ve come to the right place. Expect to be served drinks with stainless steel coasters and straws, crystal clear ice cubes from the imported Japanese ice-machine, as well as sometimes the addition of smoke – the boys smoke some of the cocktails with hickory wood chips.
All the juices and produce used in their cocktails are sourced from the Queen Victoria Market, and they make their own reductions and syrups in-house to deliver authentic flavour.
If it’s a cocktail you’re after, go for the Penicillin with Bulleit Bourbon, lemon juice, Fruitlab Organic Ginger Liqueur, honey syrup and Laphroaig 10 Year Old Scotch Whisky. There is also an extensive range of craft US beer and cider with a rotating US tap beer and a selection of more than 20 craft bottled beers.
Combining their love of the Americas with their extensive hospitality experience, the Welch brothers have created one of Melbourne’s best drinking holes. Finger-licking food, a comprehensive booze list and a relaxed setting that makes it a great place to spend a night – or two.
