Founded in 2004 with a focus on bringing premium Aussie beef to the Hong Kong market, Wooloomooloo Group is named after a town in Sydney, Australia. The group has expanded with three unique concepts that accommodate the diverse markets in Hong Kong and Singapore: Wooloomooloo Prime, Wooloomooloo Steakhouse and The Chop House. Wooloomooloo Prime is the group’s upscale arm, sticking with the winning formula of great service, a diverse wine list and classic grill favourites, with a few fine-dining touches and an expanded selection of premium steaks.
Wooloomooloo Prime’s 10,000-square-foot space is divided into a lounge and terrace on one side, and an open kitchen and dining room on the other. Floor-to-ceiling windows offer jaw-dropping views – grab a table next to the window and you’ll be able to survey the twinkling lights of Victoria Harbour, which dances nightly with the Symphony of Lights show.
Once you’re settled into one of the comfy red leather chairs, order yourself a martini and nibble on the baskets of warm bread and butter that arrive at the table as you take the time to peruse the extensive menu.
In classic steakhouse style, appetisers are generous and hearty. Choose from the Wooloomooloo crab cakes served with mustard mayonnaise and coleslaw, topped with mesclun salad; to the braised sea scallops wrapped in applewood smoked bacon with mango chutney and salmon roe.
As for the headliner, it’s hard to go wrong with the selection of premium steaks, whether you opt for the tender grass-fed filet mignon or the classic rib eye boasting a spicy Cajun-seasoned crust. The Australian tomahawks are the heavy hitters on the menu, 120-day grain-fed and wet aged steaks sourced from Western Australia, designed to share between two or three.
A supporting cast of meat and seafood dishes are equally as exciting, from luscious spinach and ricotta ravioli bathed in a butter and parmesan emulsion, to Australian lamb cutlets crusted with a herbaceous garlic and parsley persillade, served with red wine sauce and tamarillo chutney.
Save some room for dessert and you’ll be rewarded with towering slices of cheesecake drizzled with red berry sauce; crisp white pavlova with a cloud of Chantilly cream, and four different variations of soufflé.
Adding the final touch is an extensive wine list that features big name bottles alongside some unique finds from Australia’s boutique vineyards. There’s also an extensive collection of cocktails with over 65 different cocktails to try. Choose from options that include strong-hitting premium gin and tonics to fruity libations such as the strawberry and thyme smash, muddled with lemon juice and orange liqueur.
