The unique bar follows the model of a ‘cocktail concierge service’, where drinks are crafted entirely on individual preferences. It’s not a new concept, but one that’s been given a fresh coat of paint through the artistry and creativity of the bar’s namesake: Joseph Boroski. This savvy cocktail ‘mixsultant’ has put his stamp on some of the world’s best bars, spanning more than 20 countries across five continents.
Part mixologist and part consultant, Joseph spends his days training up-and-coming bartenders, creating the bar program for world-class restaurants and resorts, and teaching at his Bangkok flagship, The Joseph Boroski Bar and Hospitality School. The rest of the time, he travels the world chasing down the latest trends and insights into the global cocktail scene.
J. Boroski was brought to Hong Kong by local restaurant group Dining Concepts. Together they have recreated the bar, delivering an exclusive cocktail concierge service in a one-of-a-kind environment.
The jaw-dropping space is focused on a long elongated bar with a fascinating latticework of leather panels, adorned with preserved beetles climbing up and across the curved, tunnel-like ceiling. Brought to life by Joseph’s long-time collaborator, Bangkok nightlife legend, Ashley Sutton, the design nods to Joseph’s fascination with science and etymology, with rows of clear vials filled with all types of house-infused syrups crowding the shelves.
Once you enter from Ezra Lane you’ll be greeted by tables along the wall, but for the best view and experience in the house, you’ll want to take a seat at the bar, where you’ll have your own personal bartender to stir, shake and pour your dream cocktail.
Those bartenders hail from all over the world and have undergone rigorous training from the bar’s head maestro, who also makes frequent appearances in Hong Kong. There’s no menu, so your first step is to answer the bartender’s questions about your preferences, likes, dislikes and previous cocktail encounters – until they have enough information to craft your perfect libation.
Ask for a fruity, floral tipple, and you may end up with vanilla- and chrysanthemum-infused gin, brightened with homemade hibiscus syrup and blueberry jam. If you prefer something smoky and spirit-driven, you could get a riff on a Manhattan made with coffee-infused bourbon, or a negroni topped with a bouquet of torched herbs.
In the rare case that you’re dissatisfied with your drink, the bartenders will readily swap it out and bring you something new. Not that this happens often.
