The long-time dream of Brittany Lindores and Josh Taylor was to open a toast bar, and when they found the perfect corner spot in Braddon, they decided to put their careers on hold and plunge right in.

Brittany left her job as a nurse while Josh put his professional cycling career on the back burner, and now the doors are open.

With the assistance of local architect Jenny Blair, they’ve made the most of the space with floor-to-ceiling windows, which soak the bar in sun. Glossy white tiles, timber shelving and hand-blown tulip light fittings bring an extra element of warmth to the venue.

As the name suggests, the menu is dedicated to toast, with handmade and wood-fired bread from Tin Shed Breads in Gundaroo. Both light options and full meals are available, with whimsical names such as I Want to Hold Your Ham, and the BAE or Bacon, Avocado and Egg on toast.

Coffee is roasted by Kyo Coffee Projects, which is the brainchild of Michael Phelan and Natasja Tobin. The couples have been friends for almost a decade, so Brittany and Josh didn’t have to look too far for a coffee supplier. The name Kyo is Japanese for Capital, which is a nod to this growing Australian Capital city, and also reflects Natasja’s admiration of the Japanese culture.

“The Kyo project aimed to bridge the gap between coffee professionals and consumers by presenting the information in a palatable and easy to understand way,” she said.

Michael and Natasja are currently roasting in Collective Roasting Solutions in Sydney, and plan to open a roastery in Canberra later this year, which will also serve as a collective space to bring the community together.

Try the yellow honey processed Costa Rican from Finca Lich, which is deliciously sweet and highlighted by a citrus acidity, reminiscent of tropical juice. The house blend is made up of the El Salvador Supersonic (natural processed) and the El Salvador Villa Galicia (washed), making for a creamy cup with Swiss chocolate and caramel-like tones.

Toasted is the best thing since sliced bread in the suburb of Braddon, and open daily from 7am to 3pm.
