Following a sneaky little five-year break from the kitchen, Paul McGivern is back and sassier than ever, and you can almost hear the people of Brisbane rejoicing at the mere mention of his name. Teaming up with Brisbane hospitality veteran, Bailee Dewes, and Head Chef, Martyn Ridings, this trio has created a restaurant that celebrates classic food made with good quality produce.
Housed in a stylish yet subtle dining room, The Wolfe draws you far away from the hustle and bustle of Stanley Street. It’s within this chic environment that you’ll find yourself flirting with entrees such as the smoked kangaroo with caramelised white chocolate, parsnip and wattleseed, and the slow-roasted Burrowdale pork belly served with milk skin, smoked pork broth and wild rice. From here, it’s onto one of the hearty mains – perhaps the Cape Grim short rib with red bean miso, black salsify and bush tomato will tickle your fancy? Or will it be the rabbit saddle served with pancetta, braised rabbit and carrot ketchup?
Desserts follow the same culinary theme in celebrating classic ingredients. After finishing your meal with a decadent selection of cheeses or the aerated chocolate with honeycomb and lavender, you’ll be what we like to call ‘elegantly sufficient’.
Having worked at wineries in both Australia and Burgundy, Paul has created a wine list that flaunts much of his own personal taste. Luckily, his taste complements the food to a T, with drops hailing from Australia, New Zealand and France and a strong focus on pinot noir, chardonnay and white burgundy.
