It’s the perfect place to start or end your night – or, indeed, to spend your entire night. The atmosphere is a relaxed but well dressed, and this combination is a thread that runs through its menu too, offering up high-class product and service, with a relaxed feel.
The management team at Longtime spent a few years developing the concept. They found a gap in Brisbane for a modern Thai dining experience that was conducive to good times, good drinks and good service. Their ambitious and perfectly executed foray into the restaurant game is, surprisingly, their first – with their backgrounds primarily in award winning pubs, clubs and bars.
The kitchen team, however, has collectively worked under three Michelin starred chefs, cooked for both British and Thai royalty and have individually earned and retained hats in two of Australia’s most respected Thai restaurants. The team is lead by Executive Chef, Ben Bertei, whose years of experience heading up Yandina’s Spirit House and extensive experience with modern Asian cuisine has made him a hot ticket chef in Australia.
The produce at Longtime is all sourced locally, from the markets at Inala to fresh seafood from the Sunshine Coast. Delivery is daily, and their standards are impeccable, they’d rather run out of a dish than prepare something that isn’t up to their standards.
That perfectionist streak runs deep – and every choice on the menu benefits from it. If you’re there for bar snacks, try the fresh oysters – either natural or bloody Mary – or go for fried chicken burger with white pepper mayo. For some brilliant fusions of the traditional and modern, pair a soft shell crab bao with apple slaw with a cocktail, or a Bangkok taco with crispy prawn laab with a beer.
For a seafood main, try the whole crispy fish with pork belly, cherry tomatoes, fresh herbs and red nahm jim, or for meatier fare, try choosing between the chargilled slow cooked rib fillet served with roasted rice chilli lime dressing, or the BBQ lamb rump with chilli Bourbon sauce, issan pickled wombok and cucumber. For dessert, order the green mango and sour apple Kelly plated with ginger and lemongrass foam, pineapple meringue and watermelon granite.
Longtime has an impressive drinks menu to match its lovingly developed food offering. Try the delicious Siam So Toasty cocktail – a mix of Martell VSOP, toasted coconut, palm sugar reduction, Xocolatle Mole chocolate bitters and anise smoke.
