Australian culinary cleverness is on show at multi award-winning Bucci in Brisbane. Executive Chef and Co-owner, Shaun Malone grew up with a passion for preparing and cooking Italian food. Now he has applied his international experience to lighten and enliven classic dishes, delighting Bucci’s growing army of fans with eye-catching presentations.
Bucci thrives in the middle of the stylish James Street Precinct. Launched in 2012, it is one of Brisbane’s most visually exciting restaurants, with great slashes of red, a bold chef’s table, dark wooden floors, acoustically softened polished concrete ceilings, pull-away bifold glass walls, and an open kitchen that invites guests to enjoy watching chefs under pressure.
There’s a lot of love in the air at Bucci. It’s in the food, in the feel of the restaurant, the service and the buzz among guests. It’s also in the relationships, thanks to the two couples who own the business. Shaun and Tanja Malone work together in Bucci, as Executive Chef and General Manager respectively, and are backed by Diane and Mike Lisle-Williams, who add marketing, design, management and financial know-how to the mix.
Shaun began as a chef in Brisbane and then headed over to London, where he met Tanja. After stints overseas, with Tetsuya among others, the couple returned to Australia to join Shannon Bennett at Vue De Monde in Melbourne. Then they travelled up to Port Douglas and joined Tony Sassi and later Spencer Patrick, before coming home to open Bucci Restaurant.
Shaun’s distinctive approach is evident in Bucci’s menus. He respects Italian traditions, allowing the fresh flavours of natural ingredients to dominate the food. He also discreetly modifies time-honoured classic dishes to tease the eye and appeal to the tastebuds, timeframes and food knowledge of modern Brisbanites. Take, for example, Bucci’s twist on the traditional lasagne – fresh pasta sheets layered with braised Wagyu beef shin, baby spinach and truffled mascarpone.
If sharing is more your thing, Bucci has you covered. Try the Burrata Tartufata from the To Share menu – stretched curd cheese with a soft creamy centre, served with truffle, James Street honey, crisp pancetta, blueberries and walnuts. With an extremely tempting array of desserts, including Bombolini – Italian doughnuts filled with rhubarb compote and thick, rich vanilla custard – there are many happy foodies in Fortitude Valley.
Bucci’s bar has the same al fresco feel as the restaurant. The atmospheric interior complements a vast array of cocktail choices, among them Bucci’s signature drinks – the renowned espresso martini and Aperol spritz. The Wine List was awarded two out of three goblets in 2013 and 2014 by Gourmet Traveller Wine – Wine List of the Year.
