Metis is more than just a dining experience. The restaurant, bar and lounge combines French-Mediterranean fine dining fare with flawless service as well as a sophisticated setting, for one unforgettable culinary crusade.
The luxurious gastronomic concept is the creation of Chef, Nicolas ‘Doudou’ Tourneville, and Managing Director, Said Alem. Previously the owners and operators of the legendary Kafe Warisan in nearby Seminyak, they opened Metis in 2009 and have been welcoming crowds ever since.
A classically-trained chef, Doudou’s passion for painting fantastic flavours on a plate began with his first apprenticeship at the age of 15. A compulsory military service saw him join the French Embassy, where he worked for an admiral as a private chef. The French Foreign Ministry was impressed enough to send him to Algeria, taking on the position of Head Chef at their outpost. He then moved to Jakarta for the same role, and noticed that Bali had a dearth of French restaurants. Partnering with fellow chef Said, he opened Kafe Warisan to great success, before extending his culinary journey with Metis.
Similarly, Said’s gastronomic experience started at the same age, with an apprenticeship in Normandy, France. Upon arrival in Bali, he started out catering for private parties, before becoming the chef at the Bali Bird Park. Soon after, he joined Doudou in taking over the management of Kafe Warisan. From there, it was a natural transition to focus his energy on Metis.
Doudou is joined by Executive Chef, Desyanto Nugroho, in introducing innovative flavours for guests to savour and sample. Initiate your decadent dining journey with the trilogy of foie gras – the three varieties include port wine with fig jam, apricot sauce and crumbled almond; champagne with verjus gelee, mango coulis and dried orange zest, and cognac with apple balsamic compote, red wine and Morello reduction.
Move onto the seafood-centric starters, including yellowfin tuna sashimi with coriander jalapeno dressing, ginger tempura and crispy garlic. The ocean theme continues with the mains, and rightly so – Metis uses only the freshest on offer. Order the seared ruby snapped fillet, served with creamy leek fondue, prawn mousse tortellini and crab bisque emulsion.
If seafood isn’t your preferred protein, turn to the diverse meat and poultry options. The roasted boneless organic quail is stuffed with wild mushroom, de puy lentils, butternut squash, lardons and sage jus, while an Australian lamb shank is slow cooked and served with soft creamy polenta, glazed organic baby vegetables, spicy tomato jam and natural jus.

Reaching the end of your meal doesn’t mean waving goodbye just yet. Retire to the bar for classic cocktails and specialty wines, or take a seat in the lounge, where a beautifully lit garden provides the perfect backdrop for a night of delicious drinking.
If you find yourself throwing a soiree, turn to Metis’ private dining area – with room for 25-100 guests, it’s ideal for everything from wedding receptions to fashion shows. For a more intimate occasion, the private wine cellar holds 12 guests and features a custom six-course degustation menu. The final element of Metis’ portfolio is the gallery, home to one of the most diverse collections of Asian art on the archipelago.
