Publishers Hotel is an iconic period building dating back more than 100 years to 1914. Situated in the newly revitalised West End of the Adelaide CBD, the building originally housed the Stock and Station Journal – a weekly newspaper servicing the rural communities of South Australia. The newspaper was printed there for almost 80 years, until the business digitised and relocated to a much smaller building.
The Publishers Hotel is the passion of former Adelaide Financier and Financial Advisor Peter Buik who saw an opportunity to restore the former structure exposing the building’s original features whilst inspiring a modern Australian menu and a global wine list. It is inspiring how old is new again in this truly outstanding venue. Peter’s passion and personality are ever present in this cosy venue.
Executive Chef, Daniel Brooks, and his team have created an innovative menu complementing the charming feel of the surroundings. Daniel has worked with a number of top South Australian chefs and has 16 years of experience in fine dining.
As well as producing innovative and quality dishes, Daniel hosts monthly wine dinners where he explains his passion behind the design of his menu with the winemakers’ specialty wines.
Local produce infuses the menu at Publishers Hotel, with a new version launched with each changing season. Fresh produce is sourced from Adelaide Hills and Fleurieu Peninsula, while red meat comes from the Limestone Coast and Adelaide Hills. The kitchen team is extraordinarily gifted at creating memorable seafood dishes using only the best, local ingredients.
With seven entrée and seven main items per season, the modern Australian menu covers a wide array of flavours with a varied selection of proteins such as smoked dried rib eye, wild rabbit and hogget. Each dish is a play on classic flavours with an innovative twist, such as the Publishers Delight – this unique dessert consists of layers of brandied chocolate truffle, rose water gel, vanilla cream pearls and candied rose petals. Delicious!
The restaurant carries some 300 local and international wines, ranging in price and quality. The French Burgundy range and Italian Barolos showcase a delicious international variety, while many of the best aged wines from Adelaide Hills and Barossa Valley are also available. There is something for every occasion and price range, including an extensive range of dessert wines. Additionally, there are 25 wines by the glass and the Sommelier or Manager is available to suggest a suitable beverage for the occasion. On Fridays and Saturdays, the Sommelier opens a special bottle by the glass to add an extra touch to a great dining experience.
