Proof is a buzzing and casually sophisticated bar leading the charge as Adelaide’s first-ever small bar. They’ve perfected the formula for a great night out, combining curated cocktails with excellent service and a lively atmosphere.
This is the most recent venture of the team behind Press and Melt CBD. Its name was inspired by three elements: its proximity to The Advertiser building, its use as a measurement of alcohol and its close relationship with Press Food and Wine.
Proof is actually the first venture of Shane Ettridge and Joseph Wilkinson, although combined they have more than 20 years’ experience in the industry. Separately, the pair cut their teeth working in the UK. After returning to Australia, they worked locally under some of Adelaide’s most highly regarded chefs and restaurateurs.
According to Shane, Proof is the result of years of late-night, post-shift chats about the venue they would open together if they ever got the chance. When they were presented with the idea of opening a bar with the team from Press, they jumped at the opportunity to make their dream a reality.
Upon entry to the dimly lit bar, with its gold ceiling and timeless interior you’ll be greeted by talented bartenders as they show off their stuff. Beyond the comprehensive offerings of cocktails and wines you can also choose from a wide range of aperitif and digestive beverages as well as a lengthy list of gins.
The wine list is excellent, with plenty of well-priced local and international drops. From dry to fruit-forward whites there is something for every drinker’s taste. Red connoisseurs will appreciate the breadth, with everything from a rose to a nero d’avola on offer.
The cocktails range from classic to innovative, showcasing local and seasonal ingredients. A winter favourite is the Ruby Root – a blend of plum pisco, beetroot, lemon, sugar syrup, egg white and cracked pepper.
A small menu of snacks is on hand to ward off any hunger pangs. Toasties ooze with fillings like jamon and Tasmanian truffle; truffled mushroom and gruyere cheese, and beef ragu with fontina, while cheese boards feature both imported and local farmhouse cheeses.
Proof is perfectly located for pre- and post-dinner drinks, sitting between some of Adelaide’s best restaurants. Come Friday, you’ll need to get there early for a prime position. Perch at the bar downstairs to watch the bartenders do their thing, or take advantage of the table service and grab a seat. The bar has split-levels, so wander upstairs to the lounge or set up camp on the bar’s rooftop deck.
Proof’s fantastic reputation is a reflection of the people who work the bar each night. Their knowledge and passion for what they do is obvious, but you get the feeling that they don’t take themselves too seriously. They are informed, but informal.
